Chocolate Cream Pie

Ingredients:

4 egg yolks

1 1/2 Cups White Sugar

4 Heaping Tablespoons Corn Starch

1/2 Cup Cocoa Powder

1/2 teaspoon salt

2 1/2 Cups Milk

1 Tablespoon Butter

1 1/2 teaspoons vanilla

Directions:

  1. Cream egg yolks and sugar with a mixer.
  2. Blend in cornstarch, cocoa, and salt.
  3. Slowly stir in milk.  The mixture will be very thin.
  4. In a pot on the stove, cook mixture until very thick, stirring often. This will take quite a while. Keep it at a low to medium heat.  It should end up a thick custard like texture.
  5. Remove from heat. Then stir in butter and vanilla.
  6. Pour into previously baked and cooled pie crust.  Let cool on the counter, then chill in the refrigerator for at least 4 hours to set.  Top with Whipping Cream.

 

For Whipping Cream:

Beat 1 Cup of Heavy Cream in a mixer until it is thick and forms peaks.  Then add 1 tsp Vanilla Extract and 4 Tablespoons confectioner’s sugar.  Mix until combined.
