Chocolate Cream Pie
Ingredients:
4 egg yolks
1 1/2 Cups White Sugar
4 Heaping Tablespoons Corn Starch
1/2 Cup Cocoa Powder
1/2 teaspoon salt
2 1/2 Cups Milk
1 Tablespoon Butter
1 1/2 teaspoons vanilla
Directions:
- Cream egg yolks and sugar with a mixer.
- Blend in cornstarch, cocoa, and salt.
- Slowly stir in milk. The mixture will be very thin.
- In a pot on the stove, cook mixture until very thick, stirring often. This will take quite a while. Keep it at a low to medium heat. It should end up a thick custard like texture.
- Remove from heat. Then stir in butter and vanilla.
- Pour into previously baked and cooled pie crust. Let cool on the counter, then chill in the refrigerator for at least 4 hours to set. Top with Whipping Cream.
For Whipping Cream:
Beat 1 Cup of Heavy Cream in a mixer until it is thick and forms peaks. Then add 1 tsp Vanilla Extract and 4 Tablespoons confectioner’s sugar. Mix until combined.
